This is one of those cookbooks that I just know I'll never purge from my personal cookbook collection.  Ms. McDermott has done an amazing job cataloging the best of the best of Southern pies.  Some recipes are well-known and well-loved interpretations of modern classics (Chess pie recipes in abundance)...but many are hardly referenced these days (Bean pie, anyone?).  The recipes are reliable and delicious.
